Chipped Beef Casserole
1/4 lb. cut up chipped (chopped) beef
(or) hamburger
2 hard boiled eggs
2Tbsp. grated onion
1 c. uncooked elbow macaroni ( your choice)
1 c. condensed cream of mushroom soup
2 c. grated Cheddar cheese
Mix all ingredients and pour into a 2 qt. casserole
dish. Cover and refrigerate over night.
Bake at 350 for 30 mins. or until hot.
serves 4-6
Pepper Steak
1 lb. Flank steak, cut into strips 1/4" x 2" long
1Tbsp.cornstarch
1/4 tsp. pepper
pinch of pepper
4 Tbsp. soy sauce
1/4 tsp. ginger
1 Tbsp. sugar
Mix and let sit for 5 Min's.
Slice onion into rings,mushrooms and green
pepper into long slices and stir fry in hot oil
(not more than 3 Min's. tho).remove from pan.
Brown meat in oil. Then mix altogether and
serve over cooked rice.
Barbecued Beans
2 (16ozs.) cans pork and beans
1 can drained tomatoes
1 c. apple cider
1/2c. ketchup
1/2c. brown sugar
1/2 onion,chopped
2 Tbsp. horseradish
1 Tbsp. worcestershire sauce
1tsp. salt
1 tsp. dry mustard
1/2 tsp. pepper
Mix all ingredients together,put in a shallow
baking pan (3 qt.)
Bake at 350 degrees : for 1-1/2 to 2 hours
